Recipe for Ginger Cake with Crystallized Ginger
Ingredients

To make this ginger cake, you will need the following ingredients:
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 3/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground ginger

- 1/2 cup (1 stick) unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup dark brown sugar
- 2 large eggs
- 1/2 cup unsulphured molasses
- 1/2 cup milk
- 1/2 cup chopped crystallized ginger
Instructions
Follow these steps to make this delicious ginger cake:
- Preheat oven to 350°F. Grease a 9-inch round cake pan.
- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, ginger, cinnamon, cloves, and nutmeg. Set aside.
- In a large bowl, beat together the butter and sugars until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in the molasses.
- Add the dry ingredients to the wet ingredients in three batches, alternating with the milk, beginning and ending with the dry ingredients. Beat until just combined.
- Stir in the crystallized ginger. Pour the batter into the prepared pan and bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
